We just call it arroz. In Valencia the dish is called paella; in Alicante, where our cooking comes from, the same dish is called arroz. Same pan, same fire, same rice — cooked to order and brought to your table in the paella pan.

Our menu lists rices by name, not by ingredient. Here is the same list in the words you probably searched for. All of them are paellas, cooked in the pan, minimum two people, price per person.
The classic sailor's rice: prawns peeled, fish boned. Nothing to peel, nothing to spit out — you eat it with a fork and clean hands. Our best seller.
€20 per person
Squid ink rice, deep and glossy, served with its own alioli on the side.
€18 per person
Del Mar, with cod and cauliflower. Pez, with squid and red prawn.
€21 · €24 per person
Garden vegetables, no meat and no fish in the rice or the stock. Worth telling us when you book.
€18 per person
Free-range chicken with artichokes; Iberian pork with mushrooms; or slow-cooked oxtail.
€22 per person
Beef tenderloin and foie; or red prawn and scallops. What people order when they are celebrating something.

Both words describe the same thing. Paella is the name of the pan, and in Valencia the dish took the name of the pan it is cooked in. Ninety kilometres south, in Alicante, the same rice is simply called arroz — arroz a banda, arroz del senyoret, arroz negro.
The two schools cook it a little differently. The Alicante one, which is ours, starts from a serious fish stock and aims at flavour in the grain rather than at the size of what sits on top: the rice arrives thin, dry and loose, and everything in it has already been peeled or boned for you.
So if you came to Madrid to eat paella, you are in the right place — you will just find it on the menu under another name.
The rice that makes 80% of our guests come back.
Seafood, peeled and boned. The one to order if it is your first time.
€20
Iberian pork, torreznos and confit garlic.
€24
Octopus and red prawn.
€25
Red prawn and scallops. The most generous one on the menu.

None of this is small print. It is how paella is served everywhere in Spain, and knowing it beforehand makes the meal better.
Both are a short walk from the centre. Our tavern at Conde de Casal does not cook rice, so for paella it is one of these two.
